After a Long Break: Wilder Perez Gesha from Peru

After a long break, I’m back with another tasting. The pause wasn’t for lack of love for coffee — I simply couldn’t find beans special and exciting enough to bring to the page and write about. But once you find a coffee this good, and then brew it well on top of that, there’s no way you keep it to yourself! Let’s get into the brewing process.

Brew Recipe & Equipment

For this brew I’m stepping a little outside my usual routine. Instead of my own grinder, the Comandante, this time I’m brewing with my dear friend Mertcan’s Kinu Titanium + Pour Over Burr. On the dripper side, my much-loved duo of the Origami Air and Abaca Plus filter paper is on the job.

On the Nose (Aroma)

Hot, warm, or cold, this coffee fills the nose so pleasantly at every stage. The aroma has a sweet, powerful profile with clear notes reminiscent of mulberry and grape molasses (pekmez).

On the Palate

The palate is wonderfully lively and mouthwatering. The first hot sip brings a strong, bright acidity, while the body sits just above medium.

The cup runs almost entirely “red” from start to finish; the red apple and red mulberry flavors are very pronounced. As it cools to warm and then cold, it loses none of its charm — this is a genuinely delicious cup. This is no ordinary, flat coffee; on the contrary, it’s layered, deep, and full of surprises. Producer Wilder Perez did a marvelous job in the field and Milestones did the same on the roast, leaving me with nothing to do but savor it. Coffee at this level doesn’t turn up in Turkey every day.

A Small Note

The only thing I could possibly criticize about this lovely coffee is, sadly, its price. As of May 29, it’s 995 lira per 100 g. And let me leave you with a brewing tip: Milestones coffees usually call for a long degassing period. To balance that out a bit, I let the coffee sit exposed to the air for 2 minutes after grinding before brewing.
